The Waffles at Said Done

Waffle

Ingredients for waffles
– 380 g of 00 flour 
– 300 g of butter 
– 250 g of water 
– 125 g of milk 
– 25 g of brewer’s yeast 
– 2 eggs 
– half a vanilla bean 
– a pinch of salt

Ingredients for salted caramel
– 250 g of granulated sugar 
– a pinch of salt 
– 120 g of cream 
– 1/2 vanilla bean 
– 200 g of butter

Ingredients for strawberry chantilly cream
– 400 g of cream 
– 100 g of strawberry pulp 
– 30 g of caster sugar

Procedure

Waffle

  1. Mix the yeast with a part of the water.
  2. Combine the milk at room temperature with the yolk and the vanilla then add the mixture of yeast and water.
  3. Pour the sieved flour and mix with the whisk to obtain a homogeneous mixture.
  4. Add the melted butter not too hot and the rest of the water stirring.
  5. Lightly beat the egg whites until stiff with salt and add to the mixture gently.
  6. Pour the mixture onto the preheated plate, close and cook for a few minutes.

Creamy gianduia

  1. Melt the sugar gently until it is caramelized.
  2. Infuse the vanilla bean into the cream with the addition of salt.
  3. Add the hot cream with the vanilla in the infusion and stir.
  4. Allow to cool for about 15 minutes and add the slightly softened butter.
  5. Mix everything with the blender and dip.
  6. Whip the cream with the sugar.
  7. Add the strawberry pulp gently, stirring.
  8. Once cooked the waffles, accompany with salted caramel or strawberry cream.
